25-Minute Vegan Instant Pot Black Bean Soup
Ingredients
- 1 pound dry black beans
- water to barely cover the beans
- 3 cups veggie broth
- 3 different color bell peppers, chopped
- 1 red onion, chopped
- 1 bag of frozen corn
- 2 tbsp Chile powder
- 1.5 tsp ground cumin
- 1 tsp salt
Preparation
Put all the ingredients in your Instant Pot.
Set it to bean/chili setting for 25-30 minutes.
Allow it to cook without disturbance.
Serving tips
Pair the soup with cashew cream made by mixing fresh cashews with apple cider vinegar and salt to mimic sour cream.
