25-Minute Vegan Instant Pot Black Bean Soup

Ingredients

  • 1 pound dry black beans
  • water to barely cover the beans
  • 3 cups veggie broth
  • 3 different color bell peppers, chopped
  • 1 red onion, chopped
  • 1 bag of frozen corn
  • 2 tbsp Chile powder
  • 1.5 tsp ground cumin
  • 1 tsp salt

Preparation

  1. Put all the ingredients in your Instant Pot.

  2. Set it to bean/chili setting for 25-30 minutes.

  3. Allow it to cook without disturbance.

Serving tips

  1. Pair the soup with cashew cream made by mixing fresh cashews with apple cider vinegar and salt to mimic sour cream.
