Steaming Garlicky Congee with Spring Veggies

Ingredients

  • a little olive oil
  • chopped garlic
  • a small onion
  • 1/2 cup cooked brown rice
  • 2-3 cups veggie broth
  • a dash of soy sauce
  • seasonal veggies
  • tofu
  • black pepper
  • optional Parmesan cheese

Preparation

  1. Warm a little olive oil in a pan

  2. Sauté chopped garlic and a small onion

  3. Add 1/2 cup of cooked brown rice

  4. Add about 2-3 cups of veggie broth and a dash of soy sauce

  5. Simmer for 15-18 minutes until the rice breaks down and turns soupy

  6. Meanwhile, sauté or grill lots of different seasonal veggies and tofu

  7. Add the veggies and tofu to the rice

  8. Garnish with black pepper and optional Parmesan cheese
