Ingredients

  • 2 Tbsp Rapeseed oil
  • 1 medium onion, finely diced
  • 2 sticks of celery, diced
  • 1 clove of garlic, finely chopped
  • 500g frozen peas
  • 150g watercress (a bag) or more green leaves – any kind
  • 100g spinach
  • 800ml vegetable stock
  • Pink Himalayan salt & pepper
  • fresh mint (optional)
