Lunch Pea& Watercress Soup
Ingredients
- 2 Tbsp Rapeseed oil
- 1 medium onion, finely diced
- 2 sticks of celery, diced
- 1 clove of garlic, finely chopped
- 500g frozen peas
- 150g watercress (a bag) or more green leaves – any kind
- 100g spinach
- 800ml vegetable stock
- Pink Himalayan salt & pepper
- fresh mint (optional)
