Simple Raw Vegan Butternut Squash Soup

Ingredients

  • 1 pound butternut squash cut into smaller cubes
  • 2-inch piece of fresh turmeric
  • A small slice of fresh ginger
  • 1 cup almond milk (add more if preferred)
  • 1 yellow or orange bell pepper
  • 2 dates
  • Juice from 1 medium lemon

Preparation

  1. Place all ingredients in a high-powered blender and blend until smooth.

  2. Pour the soup into a bowl.

  3. Add kale chips on top for crunch, which also provides a vitamin K boost.
