Simple Raw Vegan Butternut Squash Soup
Ingredients
- 1 pound butternut squash cut into smaller cubes
- 2-inch piece of fresh turmeric
- A small slice of fresh ginger
- 1 cup almond milk (add more if preferred)
- 1 yellow or orange bell pepper
- 2 dates
- Juice from 1 medium lemon
Preparation
Place all ingredients in a high-powered blender and blend until smooth.
Pour the soup into a bowl.
Add kale chips on top for crunch, which also provides a vitamin K boost.
