Vegetarian Fake French Onion Soup

Ingredients

  • 4 big leeks
  • 1 liter of water
  • a couple of potatoes
  • 1 teaspoon Marigold's Swiss vegetable bouillon
  • sourdough bread
  • organic cheddar cheese

Preparation

  1. Preheat oven to 150°C.

  2. Slice the leeks and boil them in 1 liter of water with a couple of potatoes and 1 teaspoon of Marigold's Swiss vegetable bouillon.

  3. Distribute the soup into little ceramic pots.

  4. Cut sourdough bread into squares and place over the soup.

  5. Sprinkle with organic cheddar cheese.

  6. Place into the oven and bake for 10 minutes until the cheese melts and the bread is crispy.

Health benefits

  1. Leeks contain allicin which is anti-bacterial, anti-fungal and anti-viral. When digested, it produces sulfenic acid that neutralizes free radicals. Leeks also contain vitamin K, folic acid, manganese, and other nutrients. They are rich in polyphenols and contain kaempferol, a flavonoid that helps protect blood vessel lining. Leeks deserve a place in an anti-aging diet.
