Vegetarian and Very Fake French Onion Soup

Ingredients

  • I had about 4 big leeks from my box so I sliced and boiled them in 1L of water with a couple of potatoes and 1tsp of Marigold's Swiss vegetable bouillon .Then I distributed the soup in little ceramic pots. I cut some sourdough bread into squares and placed over the soup. I sprinkled them with organic cheddar cheese and placed into a preheated oven. It took about 10 minutes on 150C for the cheese to melt and the bread to get nice and crispy
  • Leeks contain allicin which is anti-bacterial, anti-fungal and anti-viral. While digested, it produces sulfenic acid which has the ability to neutralise free radicals. Leeks also contain vitamin K, folic acid, manganese and other nutrients. They are rich in polyphenols and contain kaempferol which is a flavonoid that helps to protect our blood vessels lining. Leeks definitely deserve a place in my anti-aging diet
