Veggie Loaded Lentil Soup
Ingredients
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 – 3 carrots, diced
- 1 1/2 cups leek, diced
- 1 cup green beans, cut into 2cm pieces
- 1 tomato, diced
- 1 potato, diced
- 1 cup lentils
- 6 cups water
- 1 vegetable bouillon
Spices
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 teaspoon curry
- Salt & Pepper, to taste
Preparation
Heat olive oil over medium heat in a large pot. Add onions and cook for 5 minutes until soft.
Add the carrots, leek, green beans and potatoes. Stir to combine and cook for 5 minutes.
Add tomatoes, lentils, spices, water and vegetable bouillon. Stir to combine, cover the lid and bring to boil on medium heat.
Turn heat to low and simmer for 30 minutes, stirring occasionally.
Serve with lemon and fresh parsley.
