Wild Jumbo Crab and Corn Chowder

Ingredients

  • 1 medium onion⁣
  • 1 shallot⁣
  • 1 tablespoon minced garlic⁣
  • 3 tablespoons whipped butter⁣
  • 2 cups chicken broth⁣
  • 1/3 cup all-purpose flour⁣
  • 4 cups milk (i used fairlife)⁣
  • 8 bacon strips⁣
  • 1 can wild jumbo lump crab meat⁣
  • mini gold yukon potatoes- about 1 bag⁣
  • 2 bell peppers⁣
  • 1 celery rib⁣
  • 2 cans whole kernel corn, drained⁣
  • 2 cups heavy cream⁣
  • 2 bay leafs, black pepper, lemon juice, salt to taste⁣

Preparation

  1. Preheat oven to 350 and roast the bacon for 20 ish minutes (or until golden) on a lined pan with tinfoil

  2. In a large saucepan, saute the chopped onion, shallots and butter until translucent

  3. Add flour; cook and stir until thick, add in 1/2 cup chicken broth so it doesn’t burn

  4. Gradually add in milk; cook until thickened, on low heat

  5. Add all other ingredients

  6. Chop bacon up finely and add

  7. Cover and simmer until veggies are tender, about 45 min to 1 hour

  8. If the soup is too thick- add in the other 1

  9. Cups of chicken broth⁣

  10. Can omit all together if you want)

  12. Serve this for your family, and it freezes well too!⁣
