Zen Soba Noodle Bowl
Ingredients
- 4 cup vegetable stock
- 1 box mushrooms of choice
- handful of goji berries
- 1 tbsp rice vinegar
- 2 tbsp tamari/soy sauce
Preparation
Wash and slice mushrooms, in a large pot, heat a drizzle of olive oil, sauté mushrooms till moisture lets out
Add vegetable broth, goji berries, bring to a boil then let simmer for 20-25 minutes, season with vinegar and tamari sauce
Cook the noodle as instructed on the package, drain and serve with the broth
Sesame Baked Tofu- Press and drain 1 block extra firm tofu, cut into 1/2 inch wide slices
Make the marinade with tamari sauce, water and balsamic vinegar, 3:2:1, make enough to cover the tofu, let marinade for at least 30 minutes
Mix black and white sesame seeds, press into the tofu slices
Bake at 350 F for 10 minutes, flip and bake for another 10
