Zen Soba Noodle Bowl

Ingredients

  • 4 cup vegetable stock
  • 1 box mushrooms of choice
  • handful of goji berries
  • 1 tbsp rice vinegar
  • 2 tbsp tamari/soy sauce

Preparation

  1. Wash and slice mushrooms, in a large pot, heat a drizzle of olive oil, sauté mushrooms till moisture lets out

  2. Add vegetable broth, goji berries, bring to a boil then let simmer for 20-25 minutes, season with vinegar and tamari sauce

  3. Cook the noodle as instructed on the package, drain and serve with the broth

  4. Sesame Baked Tofu- Press and drain 1 block extra firm tofu, cut into 1/2 inch wide slices

  5. Make the marinade with tamari sauce, water and balsamic vinegar, 3:2:1, make enough to cover the tofu, let marinade for at least 30 minutes

  6. Mix black and white sesame seeds, press into the tofu slices

  7. Bake at 350 F for 10 minutes, flip and bake for another 10
