cauliflower curry burrito

Ingredients

  • 1 cauliflower⁣
  • 1 zucchini⁣
  • 1 carrot⁣
  • 1 red onion⁣
  • 4 pickled jalapeños ⁣
  • olive oil⁣
  • 3tb curry powder⁣
  • salt, pepper⁣
  • juice of 1/2 lime⁣
  • bunch fresh cilantro⁣
  • 6 burrito tortillas⁣
  • about 12 cherry tomatoes ⁣
  • 6tb plantbased cream⁣
  • 1ts maple syrup⁣

Preparation

  1. Preheat oven to 200 degrees⁣

  2. Chop all veggies in small pieces⁣

  3. Fry onion in oil⁣

  4. Add the curry powder⁣

  5. Add cauliflower, zucchini and carrots to a baking tray⁣

  6. Sprinkle with oil⁣

  7. Bake for about 30 minutes⁣

  8. Puree the lime, cream, maple syrup, jalapeños and cilantro⁣

  9. Mix baked veggies with curry and onion⁣

  10. Bake tortillas in a pan without oil for about a minute on each side⁣

  11. Serve tortillas with fresh tomatoes, cilantro sauce and cauliflower curry⁣
