cauliflower curry burrito
Ingredients
- 1 cauliflower
- 1 zucchini
- 1 carrot
- 1 red onion
- 4 pickled jalapeños
- olive oil
- 3tb curry powder
- salt, pepper
- juice of 1/2 lime
- bunch fresh cilantro
- 6 burrito tortillas
- about 12 cherry tomatoes
- 6tb plantbased cream
- 1ts maple syrup
Preparation
Preheat oven to 200 degrees
Chop all veggies in small pieces
Fry onion in oil
Add the curry powder
Add cauliflower, zucchini and carrots to a baking tray
Sprinkle with oil
Bake for about 30 minutes
Puree the lime, cream, maple syrup, jalapeños and cilantro
Mix baked veggies with curry and onion
Bake tortillas in a pan without oil for about a minute on each side
Serve tortillas with fresh tomatoes, cilantro sauce and cauliflower curry
