- creamy spiced black beans (black beans w/ minced garlic, chipotle paste, cumin, oregano, bay leaves, lemon juice, lime juice, s&p, medium hot sauce ~> add water to cover + boil + simmer 1-2 hours w/ lid on) + stir in vgn greek yogurt
- sautéed red pepper & onion
- mild salsa
- homemade guacamole
- sweetcorn
- iceberg lettuce
