Vegan Burrito with Spiced Black Beans and Rice

Ingredients

  • wholemeal tortilla wraps
  • peri peri spiced rice
  • black beans
  • minced garlic
  • chipotle paste
  • cumin
  • oregano
  • bay leaves
  • lemon juice
  • lime juice
  • salt and pepper
  • medium hot sauce
  • vegan Greek yogurt
  • red pepper
  • onion
  • mild salsa
  • homemade guacamole
  • sweetcorn
  • iceberg lettuce

Preparation

  1. Prepare creamy spiced black beans by adding water to cover, then boil black beans with minced garlic, chipotle paste, cumin, oregano, bay leaves, lemon juice, lime juice, salt, pepper, and medium hot sauce; simmer for 1-2 hours with lid on, then stir in vegan Greek yogurt.

  2. Sauté red pepper and onion until softened.

  3. Assemble the burrito by filling a wholemeal tortilla wrap with peri peri spiced rice, creamy spiced black beans, sautéed red pepper and onion, mild salsa, homemade guacamole, sweetcorn, iceberg lettuce, and additional vegan Greek yogurt if desired.

  4. For a burrito bowl alternative, combine all ingredients in a bowl without wrapping, using any leftovers for a quick meal.
