Simple Coronation Chickpea Wraps for Lunch

Ingredients

  • wholemeal tortilla wraps
  • rocket salad mix
  • vegan cream cheese
  • carrot sticks
  • salsa
  • small can of chickpeas
  • mango chutney
  • oatly greek yogurt
  • medium curry powder
  • raisins
  • dried apricots
  • flaked almonds

Preparation

  1. Drain and wash the chickpeas from the small can.

  2. Chop a few dried apricots.

  3. In a bowl, mix the chickpeas with 1 tablespoon mango chutney, 2-3 tablespoons oatly greek yogurt, medium curry powder to taste, a handful of raisins, the chopped dried apricots, and a sprinkle of flaked almonds.

  4. Assemble the wrap by adding the chickpea mixture, rocket salad mix, vegan cream cheese, carrot sticks, and salsa to a wholemeal tortilla wrap, then roll it up.
