Spinach Ravioli with Cashew Truffle Filling

Ingredients

Dough

  • 250 g fresh spinach
  • 250 g all purpose flour
  • a splash of water

Filling

  • 150 g cashew nuts
  • 50 g macadamia nuts
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 4 tbsp truffle oil

Preparation

  1. Mix flour, spinach, and water to form dough

  2. Blend cashew nuts, macadamia nuts, nutritional yeast, salt, and truffle oil to make filling

  3. Roll out dough and cut into ravioli shapes

  4. Fill ravioli with prepared filling and seal edges

  5. Boil ravioli in water until cooked through
