High Protein Tofu Curry

Ingredients

  • 1 block tofu, pat dry and cut into cubes
  • 2 tbsp cornstarch
  • 1 tbsp olive oil
  • 1 red onion, diced
  • 5 garlic cloves, minced
  • 1 small ginger piece, minced
  • 1 red chili, minced
  • 2 tbsp tomato paste
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp paprika powder
  • 1 tsp mustard powder
  • 1 red bell pepper, sliced
  • 1 cup frozen peas
  • 1 can full fat coconut milk
  • 1 lime

Toppings

  • cilantro
  • Pickled onions
  • Red chili, sliced
  • Lime wedges
  • Rice

Preparation

  1. Coat the tofu cubes in the cornstarch, olive oil and salt. Bake in the air fryer or oven at 200°C for 20 minutes.

  2. Meanwhile, sauté the red onion in 2 tablespoons of oil on medium heat for 4 to 5 minutes.

  3. Add the garlic, ginger and chili and sauté for 30 seconds.

  4. Add the tomato paste and spices. Toast for 30 seconds.

  5. Add the bell pepper, coconut milk and mix well.

  6. Add the tofu cubes, frozen peas and simmer for 5 minutes.

  7. Serve and garnish with the toppings.
