Ultimate One-Pot Red Lentil Vegetable Miso Soup
Ingredients
- 1/2 Kent pumpkin, roughly diced and peeled
- 2 celery sticks
- 1 potato, chopped and peeled
- 1 sliced leek (washed well)
- 1 cup red lentils
- 1 tablespoon vegan stock powder
- 1 tablespoon nutritional yeast
- 1 teaspoon miso paste
- Enough boiling water to just cover
Tofu seasonings
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon water
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Pepper
Tofu components
- 1/2 block extra firm tofu
Preparation
Add all soup ingredients to a large pot.
Simmer everything together for around 15-20 minutes until the vegetables are soft.
Blend everything together until smooth.
Dice 1/2 block of extra firm tofu.
Mix together the seasonings.
Fry the tofu until golden.
Toss the tofu through the seasonings and cook, stirring until all the liquid has been absorbed.
Serve.
