Hearty Tofu Wonton Soup

Ingredients

Wonton filling

  • 200g mashed tofu
  • 1/3 cup chopped mushrooms
  • 1/4 cup chopped scallions
  • 1 tsp ginger powder
  • 1/2 tsp white pepper
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt for seasoning

Broth

  • 20 wonton wrappers (homemade)
  • 2 cloves garlic
  • Thumb size ginger
  • 1/4 tsp peppercorns
  • 1 tbsp hoisin sauce
  • 1 tbsp soy sauce (optional)
  • 500 ml vegetable broth

Preparation

  1. Mix all the ingredients until well combined.

  2. Place 1 teaspoon of filling in the center of a wonton wrapper and fold to seal.

  3. Bruise the garlic, ginger, and peppercorns, then add 1 tablespoon of sesame oil in a saucepan and sauté the garlic until fragrant.

  4. Add the vegetable broth and bring to a boil, then set it aside.

  5. In another saucepan, bring water to a boil, cook the prepared wontons for about 3 minutes, then drain them before adding to the soup.

  6. Serve the wontons with steamed bok choy.
