Hearty Tofu Wonton Soup
Ingredients
Wonton filling
- 200g mashed tofu
- 1/3 cup chopped mushrooms
- 1/4 cup chopped scallions
- 1 tsp ginger powder
- 1/2 tsp white pepper
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt for seasoning
Broth
- 20 wonton wrappers (homemade)
- 2 cloves garlic
- Thumb size ginger
- 1/4 tsp peppercorns
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce (optional)
- 500 ml vegetable broth
Preparation
Mix all the ingredients until well combined.
Place 1 teaspoon of filling in the center of a wonton wrapper and fold to seal.
Bruise the garlic, ginger, and peppercorns, then add 1 tablespoon of sesame oil in a saucepan and sauté the garlic until fragrant.
Add the vegetable broth and bring to a boil, then set it aside.
In another saucepan, bring water to a boil, cook the prepared wontons for about 3 minutes, then drain them before adding to the soup.
Serve the wontons with steamed bok choy.
