Homemade Ginger Ale with Maple Syrup

Ingredients

  • 1 cup sliced ginger
  • 2 1/2 cups water
  • 5-6 tablespoons maple syrup
  • Juice from 1 1/2 lemons
  • Sparkling water

Preparation

  1. Slice the ginger and add it to a medium-sized pot with 2 1/2 cups of water. Bring to a boil and simmer for 30 minutes.

  2. Juice the lemons and add the maple syrup. Stir to combine.

  3. Strain the ginger mixture and pour the liquid into a jar with the lemon juice and maple syrup. Let it cool.

  4. To serve, fill a glass with ice, add a quarter of the mixture, and top with sparkling water.
