Easy Loaded Vegan Nachos

Ingredients

Mince filling

  • 80g soy mince
  • 15g tomato purée
  • some salt
  • some pepper
  • some cayenne pepper
  • some paprika
  • some garlic powder
  • some onion powder

Nachos

  • 1 wrap
  • favorite spices

Toppings

  • 30g vegan cheese
  • sweetcorn
  • coriander
  • 50g unsweetened soy yogurt

Guacamole

  • 45g avocado
  • cherry tomatoes
  • red onion
  • garlic powder

Preparation

  1. Preheat oven to 180°C

  2. Cook the mince filling by mixing 80g soy mince, 15g tomato purée, some salt, pepper, cayenne pepper, paprika, garlic and onion powder in one pot.

  3. Prepare the nachos by folding 1 wrap into several quarters, cutting into triangles, seasoning with favorite spices, and baking in the oven for 5-10 minutes until crisp.

  4. Add toppings to the nachos by shredding 30g vegan cheese, adding chargrilled sweetcorn and coriander, and baking to melt the cheese.

  5. Make guacamole by smashing 45g avocado and mixing with cherry tomatoes, red onion, and garlic powder.

  6. Drizzle 50g unsweetened soy yogurt on top.

  7. Assemble all layers together and serve.
