Summer = Veggies

Ingredients

  • 6 small carrots
  • small head of broccoli
  • 1 zucchini
  • bunch of green beans
  • couscous
  • everything bagel seasoning
  • salt/pepper
  • Dressing
  • 2 heaping tablespoons of tahini
  • 1 tablespoon yellow mustard
  • splash of balsamic vinegar
  • 1/4 of a lemon juiced
  • salt
  • pepper
  • hot water ( use as much as u want.. depends how thick or thin you like it to be - I always add a little at a time)

Preparation

  1. Cook your couscous as the box says

  2. I steamed my broccoli and green beans in a little bit of water in a pot with the lid on low heat

  3. Till the veggies were bright in color and had soften

  4. Min) I then cut up the zucchini in slices, carrots peeled and cut in half

  5. Tossed this all on a baking sheet with olive oil, everything but the bagel seasoning, salt pepper

  6. Baked this at 425F for 17 mins till the veggies got soft and had some color on them

  7. I plated the couscous with the veggies on top

  8. Remember half your plate should always be veggies to have better digestion

  9. I topped this with an amazing tahini mustard dressing

  11. Then mix it up in a bowl or I like to use a salad dressing cup that has the spout attached for an easy pour

  12. I posted a photo of it at the end) So shake the dressing up and make sure its well combined, taste it and see if u need more salt or lemon

  13. If you make too much you can store this in the fridge for up to 2 days
