Summer Hemp Bowls with Veggies
Ingredients
- 1/2 head broccoli
- Large handful fresh peas, shelled
- Fermented vegetables of choice
- 1 Lebanese cucumber
- Small handful mixed fresh herbs
- 2 hemp burger patties
Tahini sauce
- 1/4 cup hulled tahini
- 1/4 cup water
- 1 tsp lemon juice
- Pinch salt
- Small handful fresh herbs of choice
Preparation
Make the sauce by adding all ingredients to a small blender and blitzing until smooth. Set aside.
Finely grate the broccoli using a food processor and divide between two bowls. Tear up fresh herbs and mix through, then top with fermented vegetables, peas, and cucumber.
Heat a small skillet over medium heat. Once hot, add a small drizzle of oil and cook two hemp patties for about 5 minutes on each side. Slice into wedges, divide between the bowls, drizzle generously with tahini sauce, and enjoy immediately.
