Summer Hemp Bowls with Veggies

Ingredients

  • 1/2 head broccoli
  • Large handful fresh peas, shelled
  • Fermented vegetables of choice
  • 1 Lebanese cucumber
  • Small handful mixed fresh herbs
  • 2 hemp burger patties

Tahini sauce

  • 1/4 cup hulled tahini
  • 1/4 cup water
  • 1 tsp lemon juice
  • Pinch salt
  • Small handful fresh herbs of choice

Preparation

  1. Make the sauce by adding all ingredients to a small blender and blitzing until smooth. Set aside.

  2. Finely grate the broccoli using a food processor and divide between two bowls. Tear up fresh herbs and mix through, then top with fermented vegetables, peas, and cucumber.

  3. Heat a small skillet over medium heat. Once hot, add a small drizzle of oil and cook two hemp patties for about 5 minutes on each side. Slice into wedges, divide between the bowls, drizzle generously with tahini sauce, and enjoy immediately.
