Sweet Potato Falafel
Ingredients
- 230g chickpeas, canned or cooked
- 200g steamed or cooked sweet potato
- 1 yellow onion, roughly chopped
- 3 garlic cloves
- handful of fresh herbs of choice (parsley, coriander, or mix of both)
- 2 tbsp of tahini
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp salt, or more to taste
- 1 tbsp sesame seeds (optional)
Preparation
Preheat oven to 210C
Place all the ingredients (except sesame seeds) in a food processor and pulse blend until combined, but still chunky
With your hands (wet them slightly if the dough is sticking to your fingers), form about 16 balls, lightly press them on a baking tray lined with parchment paper and sprinkle sesame seeds on top (optional)
Bake for 20 minutes or until golden brown and crispy on outside
