Enchanting Chocolate Forest Cake

Ingredients

  • 1 cup unsweetened oat milk
  • 1 cup coffee, warm
  • 1/2 cup coconut oil, melted
  • 2 tablespoons apple cider vinegar
  • 2 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

Buttercream

  • Two cans coconut cream, chilled
  • 1/2 cup cacao powder
  • 1 1/2 cups icing sugar

Preparation

  1. Preheat oven to 350°F.

  2. Prepare your cake pans.

  3. Combine apple cider vinegar with oat milk to make buttermilk.

  4. Sift all dry ingredients into one bowl.

  5. Add wet ingredients, including buttermilk, to a separate bowl.

  6. Pour wet ingredients into dry ingredients.

  7. Stir until combined and mixed well.

  8. Pour batter into prepared pans.

  9. Bake for 45 minutes or until firm.

Frosting

  1. Chill two cans of coconut cream.

  2. Remove the solid cream from the cans and save the liquid for another use.

  3. Combine the coconut cream with 1/2 cup cacao powder and 1 1/2 cups icing sugar in a bowl.

  4. Mix until well combined and adjust consistency with more icing sugar or additional cacao powder if needed.

Assembly

  1. Allow the cake to cool completely, then frost with the buttercream and decorate as desired.

Notes

  1. This recipe can make two 6-inch cakes and three cupcakes.
