Fluffy Little Lemon cookie

Ingredients

  • 1/3 cup coconut butter
  • 1/3 cup agave or maple syrup
  • 1/2 cup cassava flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/8 tsp salt
  • 1/2 cup powdered sugar
  • 1–2 tbsp lemon juice

Preparation

  1. Preheat the oven to 350ºF

  2. Melt the coconut butter and sweetener

  3. Whisk in the lemon juice

  4. Add cassava flour, baking soda, baking powder, lemon zest, and salt

  5. Stir to combine

  6. Scoop about 2 tbsp of dough and roll into a ball

  7. Arrange on a baking sheet, and press to just slightly flatten

  8. Bake for 8-10 minutes at 350ºF

  9. Enjoy warm, or cool before glazing

  10. Whisk together the powdered sugar and lemon juice until thick but drizzle-able

  11. Glaze cooled cookies, refrigerate until set
