Air Fryer Bbq Chicken Salad
Ingredients
Bbq rub
- 1 tbsp smoked paprika
- 1.5 tsp coconut sugar
- 1 tsp celery salt
- 1 tsp dry mustard
- 1 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp pepper
- 1/4 tsp sea salt
Salad components
- chopped romaine lettuce
- 3/4 cup black beans
- 3/4 cup corn
- 1 cup diced cherry tomatoes
- 1/3 cup celery
- 1/3 cup diced red onion
- 1 avocado diced
- 1/2 cup chopped cheddar
- cilantro for garnish
Dressing
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp maple syrup
Preparation
Toss 2 chicken breasts with the rub and let marinate in the fridge for 30 minutes minimum
Spray your air fryer, add chicken and air fry at 400 for 16 minutes, flipping halfway through
Remove and let sit for a few minutes before slicing
Whisk together the dressing ingredients
Assemble salad bowls with lettuce, beans, corn, tomatoes, celery, onion, avocado, cheese and garnish with cilantro if desired
Tips
You can swap the air fryer for a real BBQ if preferred
This dish is ideal for simple weeknight meals or meal prep lunches
