Broccoli Orecchiette Pasta Dish

Ingredients

  • 1 broccoli head
  • 2 garlic cloves
  • 1 chili pepper or chili flakes
  • 2 teaspoons capers
  • 1 tablespoon olives
  • 1 shallot
  • 2 tablespoons nutritional yeast
  • Salt
  • 250g orecchiette pasta
  • 1/2 lemon
  • 1/2 teaspoon bouillon powder
  • Water

Preparation

  1. Cut the broccoli into small pieces and cook it by steaming or boiling, uncovered to keep it green.

  2. Start cooking the pasta.

  3. Meanwhile, in a skillet, sauté the minced shallot, chili flakes, minced garlic, and capers.

  4. Once the broccoli is tender, add it to the skillet.

  5. Use a spatula to mash the broccoli into a sauce, breaking it down as much as possible.

  6. Add a little water and the bouillon powder to make a sauce.

  7. Season with salt.

  8. When the pasta is cooked, drain it, reserving a ladle of cooking water.

  9. Add the lemon juice to the mixture and incorporate the sauce into the pasta.

  10. Add some pasta cooking water if necessary to adjust consistency.

  11. Finish with nutritional yeast, minced black olives, and serve.
