Creamy Roasted Red Pepper Pasta
Ingredients
- 8 oz gluten free pasta
- 1/4 cup raw cashews
- 1/4 cup water
- 1/2 cup fire roasted red peppers (from a jar)
- 2 tablespoons nutritional yeast
- 1 small lemon, juiced
- 1 garlic clove
- 1/2 teaspoon salt and pepper
- 1 tablespoon maple syrup
- crushed red pepper (optional for spice)
Preparation
Cook pasta according to package directions.
Add remaining ingredients to a blender and purée until smooth and creamy. Season to taste.
Drain pasta, reserving 1/2 cup pasta water, and return to pot over low heat and top with sauce. Stir to coat and heat through.
Transfer to serving bowls and garnish with fresh basil if desired.
