Creamy Vegan Cheese Pasta

Ingredients

Sauce

  • 1/2 medium sized cauliflower head
  • 1/2 medium sweet potato
  • 1/2 cup cashews
  • 1/4 cup nutritional yeast
  • 1/2 cup plant based unsweetened milk
  • 1 tbsp apple cider vinegar
  • 1 tsp sea salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika powder

Additional

  • 1 broccoli head
  • 1 packet of spaghetti (gf or not)

Preparation

  1. Dice the cauliflower into florets and the sweet potato into cubes. Bring a pot to boil and place the cauliflower, sweet potato and cashews in the pot. Simmer on medium until tender.

  2. Drain and add everything to a blender and blend on high until smooth, adding a little more milk if needed to help it along. Taste test and add more salt or vinegar if needed.

  3. Cook the pasta to packet instructions.

  4. In a large pan, heat a dash of oil or water on medium-high heat. Add in broccoli florets with a pinch of salt. Then once the pasta is cooked, add to the pan along with the sauce and stir to combine.

Serving suggestions

  1. Serve with some vegan Parmesan and fresh herbs for a little extra, and enjoy!
