Vegan Creamy Potato Pasta
Ingredients
- gluten-free pasta shells
- boiled potatoes
- garlic
- onions
- oat milk
- vegan cream cheese
- nutritional yeast
- herb and spice blends
- sea salt
- pepper
- kalettes
- rose harissa pesto
Preparation
Boil the potatoes until tender.
Sauté garlic and onions until softened.
Blend the boiled potatoes, sautéed garlic and onions, oat milk, vegan cream cheese, nutritional yeast, herb and spice blends, sea salt, and pepper until smooth to make the sauce.
Cook the gluten-free pasta shells according to package instructions.
Sauté the kalettes until slightly softened.
Combine the cooked pasta with the sauce and kalettes.
Top with rose harissa pesto and serve.
