Creamy Vegan Potato Pasta
Ingredients
- potatoes
- garlic
- onions
- oat milk
- vegan cream cheese
- nutritional yeast
- herbs
- spice blends
- sea salt
- pepper
- kalettes
- rose harissa pesto
- gluten-free pasta shells
Preparation
Boil the potatoes until soft
Sauté the garlic and onions until fragrant
Blend the boiled potatoes, sautéed garlic and onions, oat milk, vegan cream cheese, nutritional yeast, herbs, spice blends, sea salt, and pepper to make the sauce
Cook the gluten-free pasta shells according to package instructions
Add the kalettes to the pasta or sauce and cook until slightly softened
Combine the pasta and sauce, then top with rose harissa pesto before serving
