Creamy Tomato Pasta with Vegan Sauce
Ingredients
- 1 cup potatoes, peeled and cubed
- 1 small white onion, roughly chopped
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast
- 1 1/3 cups oat milk
- 350 ml vegan bolognese sauce
- 500 g tagliatelle pasta
- tomato sauce, to taste
Preparation
Bring a small saucepan of water to a boil.
Add the cubed potatoes and chopped onion.
Cook for 5-6 minutes or until the potatoes are soft.
Drain the water.
Add the vegetables to a blender along with lemon juice, nutritional yeast, and oat milk.
Blend until smooth.
Transfer the sauce back to the saucepan.
Bring it to a boil for a short time.
Mix in the tomato sauce.
Combine with 350 ml of vegan bolognese sauce.
Cook 500 g of tagliatelle according to package instructions.
Serve the sauce over the cooked pasta.
