Creamy Tomato Pasta with Vegan Sauce

Ingredients

  • 1 cup potatoes, peeled and cubed
  • 1 small white onion, roughly chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1 1/3 cups oat milk
  • 350 ml vegan bolognese sauce
  • 500 g tagliatelle pasta
  • tomato sauce, to taste

Preparation

  1. Bring a small saucepan of water to a boil.

  2. Add the cubed potatoes and chopped onion.

  3. Cook for 5-6 minutes or until the potatoes are soft.

  4. Drain the water.

  5. Add the vegetables to a blender along with lemon juice, nutritional yeast, and oat milk.

  6. Blend until smooth.

  7. Transfer the sauce back to the saucepan.

  8. Bring it to a boil for a short time.

  9. Mix in the tomato sauce.

  10. Combine with 350 ml of vegan bolognese sauce.

  11. Cook 500 g of tagliatelle according to package instructions.

  12. Serve the sauce over the cooked pasta.
