Easy Vegan Creamy Pasta Bowl

Ingredients

  • 500g pasta
  • 350ml vegan bolognese
  • 2 small potatoes (peeled and cubed)
  • 1 small white onion (roughly chopped)
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1 1/3 cups oat milk

Preparation

  1. Bring a small saucepan of water to a boil.

  2. Add the cubed potatoes and chopped onion, and cook for 5-6 minutes or until the potatoes are soft.

  3. Drain the water and transfer the vegetables to a blender.

  4. Add lemon juice, nutritional yeast, and oat milk to the blender.

  5. Blend until smooth.

  6. Transfer the sauce back to the saucepan and bring it to a boil briefly.

  7. Mix in the vegan bolognese.

  8. Cook the pasta according to package instructions.

  9. Combine the sauce with the cooked pasta and serve.

Tips

  1. 350ml of vegan bolognese is the perfect amount for 500g of pasta.
