Creamy Vegan Bolognese Pasta
Ingredients
Cream sauce
- 2 small potatoes (peeled and cubed)
- 1 small white onion (roughly chopped)
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast
- 1 1/3 cups oat milk
Other
- 350 ml vegan bolognese
- 500 g pasta
Preparation
Bring a small saucepan of water to a boil.
Add the cubed potatoes and chopped onion and cook for 5-6 minutes or until the potatoes are soft.
Drain the water and transfer the vegetables to a blender.
Add lemon juice, nutritional yeast, and oat milk to the blender and blend until smooth.
Transfer the sauce back to the saucepan and bring it to a boil briefly.
Mix in the vegan bolognese.
Cook the pasta according to package instructions.
Combine the sauce with the cooked pasta and serve.
