Creamy Vegan Bolognese Pasta

Ingredients

Cream sauce

  • 2 small potatoes (peeled and cubed)
  • 1 small white onion (roughly chopped)
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1 1/3 cups oat milk

Other

  • 350 ml vegan bolognese
  • 500 g pasta

Preparation

  1. Bring a small saucepan of water to a boil.

  2. Add the cubed potatoes and chopped onion and cook for 5-6 minutes or until the potatoes are soft.

  3. Drain the water and transfer the vegetables to a blender.

  4. Add lemon juice, nutritional yeast, and oat milk to the blender and blend until smooth.

  5. Transfer the sauce back to the saucepan and bring it to a boil briefly.

  6. Mix in the vegan bolognese.

  7. Cook the pasta according to package instructions.

  8. Combine the sauce with the cooked pasta and serve.
