Vegan Pasta with Butternut Cheese and Veggies
Ingredients
- Pasta
- Red onion
- 2 cloves garlic
- 8 cremini mushrooms
- 3/4 cup chickpeas
- 1/2 yellow zucchini
- Spinach
- Micro broccoli
- Chili flakes
- Butternut cheese sauce
- Pasta water
- Sea salt and cracked pepper
Preparation
Cook pasta according to package instructions and reserve some pasta water.
Sauté red onion and garlic in a skillet until fragrant.
Add cremini mushrooms, yellow zucchini, chickpeas, spinach, and micro broccoli; cook until vegetables are softened.
Stir in butternut cheese sauce and pasta water to reach desired consistency.
Season with chili flakes, sea salt, and cracked pepper, then combine with cooked pasta and serve.
Notes
This is a flexible fridge clean-out meal that can use any available vegetables.
