Creamy Capsicum Pasta with Cashew Sauce

Ingredients

  • 1 cup cashews (soaked for 4+ hours)
  • 400g dry pasta
  • 1 brown onion
  • 1 red capsicum
  • 5 garlic cloves
  • 1/2 cup nutritional yeast
  • 1 tsp chilli flakes
  • 1 tsp sea salt flakes
  • 1 tbsp olive oil
  • 1 cup pasta water

Preparation

  1. Cook pasta to packet instructions and save 1 cup of pasta water

  2. Sauté the onion, capsicum and garlic in the olive oil with the sea salt and chilli flakes for 5 to 10 minutes or until browned, then transfer to a blender with the cashews, nutritional yeast and pasta water

  3. Blend until super smooth, adjust seasoning if need be, then combine with your cooked pasta on low heat for a few minutes until nice and warm

  4. Top with more chilli flakes and fresh basil if you have it

Tips

  1. If cashews are unavailable, consider using tofu as an alternative based on similar recipes
