Crispy Avocado Spring Rolls

Ingredients

  • 1 tub of Guacamole (1 lbs tub)
  • 1/3 cup chopped green onions
  • 1 jalapeño seeded and diced
  • 3 tbsp of chopped cilantro
  • 8-10 spring roll pastry dough wrappers
  • 1 cup of Oil for frying

Preparation

  1. Add chopped green onions, cilantro and diced jalapeño to the guacamole.

  2. Meanwhile add oil to the frying pan or wok and heat.

  3. Place the avocado mixture in the center of each wrapper.

  4. Using your finger, rub the edges with water.

  5. Bring the bottom edge of the wrapper and roll it tightly over the filling.

  6. Fold in the sides and continue to roll up the wrapper and press to seal.

  7. Repeat until you have used all of the wrappers.

  8. Fry the egg rolls in oil for 2 min on each side until golden brown.

  9. Remove with a metal tong onto a paper towel lined plate.

  10. Serve immediately with favorite dipping sauce.
