Crispy Avocado Spring Rolls

Ingredients

  • 3 medium ripe avocados, seeded and mashed
  • 1/3 cup chopped green onions
  • 1 jalapeño, seeded and diced
  • 3 tablespoons chopped cilantro
  • 8-10 spring roll pastry dough wrappers
  • 1 cup oil for frying or use your air fryer

Preparation

  1. In a bowl, combine chopped green onions, diced jalapeño, and chopped cilantro with mashed avocados.

  2. If using a frying pan or wok, add oil and heat. If using an air fryer, skip this step.

  3. To assemble the spring rolls, place a spoonful of the avocado mixture in the center of each wrapper.

  4. Moisten the edges of the wrapper with water using your finger.

  5. Fold the bottom edge of the wrapper over the filling and roll tightly.

  6. Fold in the sides and continue rolling to seal the wrapper.

  7. Repeat the process for all wrappers.

  8. If frying, fry the spring rolls in oil for about 2 minutes on each side until golden brown. If using an air fryer, air fry at 390°F for 15 minutes, flipping the rolls midway.

  9. Use a metal tong to remove the cooked spring rolls and place them on a paper towel-lined plate to drain any excess oil.

  10. Serve the crispy avocado spring rolls immediately with your favorite dipping sauce.
