Crunchy Chocolate Quinoa Bark

Ingredients

  • 1 cup chocolate chips
  • 1 tbsp coconut oil, melted
  • 1 cup raw quinoa

Preparation

  1. Place quinoa in a pan over medium-high heat and cook for 3-4 minutes, stirring constantly, until it starts popping like popcorn, then remove from heat.

  2. In another pot over medium-high heat, add chocolate chips and 1 tablespoon coconut oil and stir until completely melted.

  3. Mix the cooked quinoa with the melted chocolate until evenly coated.

  4. Line a 9x5 inch pan with parchment paper, pour in the mixture, and flatten it completely.

  5. Freeze for 1 hour, then cut into slices and serve.

  1. Keep in the freezer or fridge until ready to enjoy.
