Crunchy Chocolate Quinoa Bark
Ingredients
- 1 cup chocolate chips
- 1 tbsp coconut oil, melted
- 1 cup raw quinoa
Preparation
Place quinoa in a pan over medium-high heat and cook for 3-4 minutes, stirring constantly, until it starts popping like popcorn, then remove from heat.
In another pot over medium-high heat, add chocolate chips and 1 tablespoon coconut oil and stir until completely melted.
Mix the cooked quinoa with the melted chocolate until evenly coated.
Line a 9x5 inch pan with parchment paper, pour in the mixture, and flatten it completely.
Freeze for 1 hour, then cut into slices and serve.
