Easy Vegan Turkey Alternative
Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cup vegetable broth
- 2 tablespoons nutritional yeast
- 2 tablespoons neutral oil
- 2 teaspoons soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons poultry seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 1/3 cups vital wheat gluten
Glaze
- 2 tablespoons maple syrup
- 1/2 tablespoon dark soy sauce or soy sauce
- 1/2 tablespoon vegan butter
- 1/2 tablespoon sriracha
- 1/2 teaspoon smoked paprika
Preparation
Add the chickpeas, vegetable broth, nutritional yeast, neutral oil, soy sauce, apple cider vinegar, Dijon mustard, poultry seasoning, garlic powder, and onion powder to a food processor. Process until just combined. Transfer to a large glass bowl.
Add the vital wheat gluten to the bowl. Fold the gluten into the chickpea mixture. Transfer to a flat nonstick surface and knead into a rough dough for about 45 seconds. Do not overwork. Shape into a wide log.
Wrap the dough in aluminum foil or cheese cloth. Steam on a steamer basket over water on the stove for 1 hour.
Preheat the oven to 375ºF. Meanwhile, make the glaze by adding the maple syrup, dark soy sauce or soy sauce, vegan butter, sriracha, and smoked paprika to a small saucepan. Heat until just thickened. Set aside.
Unwrap the steamed ‘turkey’ and brush with about half of the glaze until evenly coated. Place on a medium baking sheet and roast for 7 minutes. Brush with the remaining glaze and bake for about 7 minutes more, or until the glaze is slightly darkened.
