Healthiest Vegan Spaghetti Bolognese

Ingredients

  • whole grain pasta
  • textured soy protein or lentils or vegan mince
  • onion
  • garlic
  • 2 carrots
  • tomato sauce
  • chopped tomato sauce
  • seasoning such as curry, paprika, pepper, chili, herbs
  • a splash of plant milk
  • nut butter
  • tahini
  • mushrooms
  • nutritional yeast
  • corn

Toppings

  • arugula or spinach
  • mustard

Preparation

  1. Sauté onion, garlic, and carrots in a pan until softened.

  2. Add textured soy protein or alternative and cook until browned.

  3. Stir in tomato sauce, chopped tomato sauce, seasoning, plant milk, nut butter, tahini, mushrooms, nutritional yeast, and corn; simmer until flavors combine.

  4. Cook whole grain pasta according to package directions.

  5. Serve pasta with the sauce and top with arugula or spinach and mustard as desired.
