Mediterranean Brown Rice Salad Jars
Ingredients
- 4 tsp olive oil
- 1 tbsp Dijon mustard
- 3 tbsp lemon juice + zest
- 2 tsp balsamic vinegar
- 3 cups cooked chickpeas
- 2 cups cooked brown rice
- 1 large cucumber diced
- 400g cherry tomatoes diced
- 1 diced capsicum
- 1/2 cup chopped dill
- 1/2 cup chopped parsley
- 2 tbsp kalamata olives pitted and diced
- 40g plant-based feta crumbled
- 4 tbsp pumpkin seeds
- 4 tbsp pickled onions
Preparation
Whisk together the olive oil, mustard, vinegar and lemon. Divide between 4 containers.
Top each container with chickpeas, rice, cucumber, tomatoes, capsicum, dill, parsley, olives, feta, pumpkin seeds and pickled onions.
When you’re ready to eat, give it a good shake, adjust the salt and enjoy.
Tips
Add the dressing at the bottom to keep veggies crunchy.
