Mediterranean Brown Rice Salad Jars

Ingredients

  • 4 tsp olive oil
  • 1 tbsp Dijon mustard
  • 3 tbsp lemon juice + zest
  • 2 tsp balsamic vinegar
  • 3 cups cooked chickpeas
  • 2 cups cooked brown rice
  • 1 large cucumber diced
  • 400g cherry tomatoes diced
  • 1 diced capsicum
  • 1/2 cup chopped dill
  • 1/2 cup chopped parsley
  • 2 tbsp kalamata olives pitted and diced
  • 40g plant-based feta crumbled
  • 4 tbsp pumpkin seeds
  • 4 tbsp pickled onions

Preparation

  1. Whisk together the olive oil, mustard, vinegar and lemon. Divide between 4 containers.

  2. Top each container with chickpeas, rice, cucumber, tomatoes, capsicum, dill, parsley, olives, feta, pumpkin seeds and pickled onions.

  3. When you’re ready to eat, give it a good shake, adjust the salt and enjoy.

Tips

  1. Add the dressing at the bottom to keep veggies crunchy.
