Raw Vegan Carrot Cake
Ingredients
Base
- 1 cup of shredded carrot (raw)
- 1 cup coconut flour
- 12 soft dates
- 1 tsp cinnamon
- 1/2 tsp ginger powder
- 1/2 cup crushed hazelnuts
- 4 tsp coconut oil
- a pinch of salt
Frosting
- 1 cup of soaked cashews
- 1/2 cup oat milk
- 1/2 cup agave syrup
- 1/2 tsp ginger
- pinch of salt
Preparation
Soak the cashews for 1 to 2 hours.
Mix all of the base ingredients and place the dough in a square-shaped form.
Mix the frosting ingredients in a high-speed blender.
Pour the frosting over the base layer.
Freeze for 2 to 3 hours or until set.
