Raw Vegan Carrot Cake

Ingredients

Base

  • 1 cup of shredded carrot (raw)
  • 1 cup coconut flour
  • 12 soft dates
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1/2 cup crushed hazelnuts
  • 4 tsp coconut oil
  • a pinch of salt

Frosting

  • 1 cup of soaked cashews
  • 1/2 cup oat milk
  • 1/2 cup agave syrup
  • 1/2 tsp ginger
  • pinch of salt

Preparation

  1. Soak the cashews for 1 to 2 hours.

  2. Mix all of the base ingredients and place the dough in a square-shaped form.

  3. Mix the frosting ingredients in a high-speed blender.

  4. Pour the frosting over the base layer.

  5. Freeze for 2 to 3 hours or until set.
