Smoky Roasted Chickpea Salad
Ingredients
- 1 head romaine
- 10 cherry tomatoes
- 1/4 red onion
- 1 mini cucumber
- 1 roasted beet
- 5 sprigs cilantro
- 1/4 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- 1/8 tsp black pepper
Smoky roasted chickpeas
- 1 can chickpeas
- 1 tsp tahini
- 1/2 tsp smoked paprika
- 2 tsp soy sauce
- 1/4 tsp sazón
Dressing
- 2 tbsp tahini
- Juice of 1 lemon
- 1 tbsp maple syrup
- 2 tsp soy sauce
- 1 tsp garlic chili sauce or 1/4 tsp garlic powder
- 1 tsp mustard
- 2-3 tbsp water
Preparation
Whisk dressing ingredients together except water.
Once combined, slowly add water and whisk together until desired consistency is achieved.
Preheat oven to 425°F and toss chickpea ingredients together, then spread on a baking sheet.
Roast chickpeas for 20-25 minutes and allow to cool.
Once all ingredients are prepared, add them to a medium-sized bowl and lightly toss together until dressing coats salad completely.
Serve as a side or combine with a starch like quinoa for a complete meal.
Tips
Make sure to season your salad for optimal taste using dried and fresh herbs, garlic powder, and salt and pepper to taste.
