Southern Fried Vegan Schnitzel with Potatoes
Ingredients
- 1/2 pack Omni mince by @omnifoods.uk
- 1 Tbsp breadcrumbs
- 1/2 Tsp dried sage
- Pinch of sea salt
- Paxo Southern Fried breadcrumbs
- Rapeseed oil
- @marksandspencerfoodpr seasonal gold potatoes
- @tescofood butterpak spreadable
- Tender stem broccoli
Preparation
In a bowl, mix the Omni mince with breadcrumbs, dried sage, and a pinch of sea salt.
Shape the mixture into schnitzel patties.
Coat each schnitzel with Paxo Southern Fried breadcrumbs.
In a pan, heat a little rapeseed oil and pan-fry the schnitzel until golden brown on both sides.
Transfer the schnitzel to a baking tray and bake in the oven at 180°C for 10 minutes.
Boil the seasonal gold potatoes until tender, then butter them with @tescofood butterpak spreadable.
Steam the tender stem broccoli until cooked to your liking.
Serve the southern fried schnitzel alongside the buttered gold potatoes and steamed broccoli.
