Southern Fried Vegan Schnitzel with Potatoes

Ingredients

  • 1/2 pack Omni mince by @omnifoods.uk
  • 1 Tbsp breadcrumbs
  • 1/2 Tsp dried sage
  • Pinch of sea salt
  • Paxo Southern Fried breadcrumbs
  • Rapeseed oil
  • @marksandspencerfoodpr seasonal gold potatoes
  • @tescofood butterpak spreadable
  • Tender stem broccoli

Preparation

  1. In a bowl, mix the Omni mince with breadcrumbs, dried sage, and a pinch of sea salt.

  2. Shape the mixture into schnitzel patties.

  3. Coat each schnitzel with Paxo Southern Fried breadcrumbs.

  4. In a pan, heat a little rapeseed oil and pan-fry the schnitzel until golden brown on both sides.

  5. Transfer the schnitzel to a baking tray and bake in the oven at 180°C for 10 minutes.

  6. Boil the seasonal gold potatoes until tender, then butter them with @tescofood butterpak spreadable.

  7. Steam the tender stem broccoli until cooked to your liking.

  8. Serve the southern fried schnitzel alongside the buttered gold potatoes and steamed broccoli.
