Roasted Pumpkin with Walnuts and Pomegranate

Ingredients

  • 1 Pumpkin (cut into wedges)
  • 3 tbsp oil
  • 2 tbsp maple syrup
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon chilli flakes
  • 1-2 teaspoons of pumpkin spice mix (optional)
  • Handful of walnuts (optional)

Garnishes

  • Pomegranate seeds
  • Vegan feta cheese
  • Fresh parsley

Preparation

  1. Mix the oil with the spices to make a marinade and then mix it with the pumpkin and walnuts.

  2. Spread the mixture on a baking sheet lined with baking paper and bake in the oven at 200°C for about 30 minutes, opening the oven door in between.

  3. Serve with pomegranate seeds, vegan feta, fresh parsley, and optionally with avocado dip.
