Roasted Pumpkin with Walnuts and Pomegranate
Ingredients
- 1 Pumpkin (cut into wedges)
- 3 tbsp oil
- 2 tbsp maple syrup
- 1/2 teaspoon sea salt
- 1/2 teaspoon chilli flakes
- 1-2 teaspoons of pumpkin spice mix (optional)
- Handful of walnuts (optional)
Garnishes
- Pomegranate seeds
- Vegan feta cheese
- Fresh parsley
Preparation
Mix the oil with the spices to make a marinade and then mix it with the pumpkin and walnuts.
Spread the mixture on a baking sheet lined with baking paper and bake in the oven at 200°C for about 30 minutes, opening the oven door in between.
Serve with pomegranate seeds, vegan feta, fresh parsley, and optionally with avocado dip.
