Spiced Roast Chicken with Sweet Potatoes and Tzatziki

Ingredients

  • 1 large chicken
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion granules
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 2-3 tbsp olive oil

Accompaniments

  • Roast sweet potatoes
  • Tzatziki (yoghurt dip with cucumber, mint and garlic)

Preparation

  1. Preheat the oven to 180C

  2. Mix all the rub ingredients together to form a paste

  3. Rub the paste all over the chicken making sure you get into all the nooks and crannies

  4. Cover the chicken with baking paper and cook till the chicken is cooked through & juices run clear (exact cooking time depends on how big your chicken is). Uncover for the last 15 minutes of cooking to crisp the skin.

  5. Let it rest for at least 20 minutes before carving

  6. Serve with roast sweet potatoes and tzatziki
