Ingredients

  • 3 tbsp of tomato sauce
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of maple syrup
  • 1 tbsp of olive oil
  • 1 tbsp of nutritional yeast
  • 1 tsp of sweet paprika
  • 1 tsp of smoked paprika
  • Freshly cracked black pepper

Preparation

  1. Whisk all the ingredients for the marinade

  2. Pour enough mixture over mushrooms and tofu cubes and toss to combine

  3. Preheat the oven to 200 degrees Celsius and transfer tofu and mushrooms to the baking tray lined with the parchment

  4. Arrange in a single layer

  5. Roast for 15 minutes

  6. Remove and flip tofu and mushrooms and brush with the rest of marinade if any is left

  7. Roast for 15 minutes more

  8. Serve them with rice or quinoa
