Vegan Malai Kofta with Flavorful Gravy
Ingredients
- Onion: 1 chopped
- Tomatoes: 2 chopped
- Ginger: 1/2 T grated
- Roasted salted cashews: 3/4th cup
- Oat cream: 1 T (optional)
- Bay leaves: 2
- Green cardamom: 4-5
- Cloves: 4
- Peppercorns: 1 t
- Cumin: 1 t
- Turmeric: 1 t
- Red chilli powder: 1 T
- Coriander powder: 1 T
- Water: 1 1/2 C
- Oil: 1 T
- Vegan butter: 1 T
- Salt to taste
- Sweet potato: 1 boiled and mashed
- Carrot: 1 grated
- Nutritional yeast: 2 T
- Red chilly powder: 1 t
- Garam masala: 2 t
- Salt: 2 t
- Corn flour: upto 2 T
- Roughly crushed roasted salted cashews: 1 T
- Oil to fry
Preparation
Heat oil and butter in pan
Add the listed whole spices and fry on low flame
Add onions and ginger. When onions begin to brown add tomatoes and the listed powdered spices
When tomatoes soften add 1/2 C water and cashews
Blend into a smooth paste with 1 C water
Strain the gravy through a fine sieve and return to heat. Bring to a gentle simmer
For Koftas, mix all the listed ingredients (minus cashews)
Roll into golf sized balls then flatten to form a disc between your palms. Stuff with cashews in the centre, fold over and roll back into balls. Dust with cornflour
Deep fry till golden brown
Add to gravy and drizzle with oat cream
