Vegan Pasta Salad with Garlic Herb Dressing

Ingredients

  • Rainbow pasta
  • Kale (green, red, and dino)
  • Chickpeas
  • Roasted red bell peppers
  • Carrots
  • Celery
  • Apples
  • Red onion
  • Avocado

Dressing

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 large clove garlic
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh mint
  • 1 teaspoon sea salt

Preparation

  1. Combine all dressing ingredients in a high speed blender and pulse until smooth.

  2. Cook the rainbow pasta according to package instructions, then drain and cool.

  3. Chop the kale, carrots, celery, apples, red onion, and avocado into bite-sized pieces.

  4. In a large bowl, mix the cooked pasta, chopped vegetables, chickpeas, and roasted red bell peppers.

  5. Toss the salad with the prepared dressing until well coated.

  6. Serve immediately or refrigerate for later.
