Vindaloo Inspired Chickpea Cauliflower Curry
Ingredients
- 2 cans chickpeas, rinsed and drained
- 2 cups diced cauliflower
- 1/2 white onion, diced
- 2 tbsp minced garlic
- 1 inch fresh ginger, minced
- 1 15oz can crushed tomatoes
- 1/2 cup coconut milk
- 2 tsp maple syrup or sweetener of choice
- 1 tsp ground coriander
- 1 tsp cumin
- 1/2 tsp ground mustard seed
- 1/4 tsp turmeric
- 1/4 tsp cardamom
- Pinch of cinnamon
- Pinch of clove
- 1 cup vegetable broth
- Salt and pepper to taste
Preparation
Add onion to a pan and sauté until softened.
Add in garlic and ginger and sauté until fragrant, about 2 minutes.
Add in spices and crushed tomatoes. Stir to combine and allow to cook for 2 minutes before adding remaining ingredients.
Stir to combine and bring to a low simmer, and cook for about 20-25 minutes.
Add salt and pepper to taste then enjoy.
