Vegan Roasted Cauliflower Soup

Ingredients

  • Cauliflower
  • Pumpkin seeds
  • Onions
  • Soy cream
  • Vegetable stock
  • Pinch of salt
  • Black pepper
  • Garlic
  • Chillies

Garnish

  • Roasted cauliflower
  • Roasted pumpkin seeds

Preparation

  1. Roast the cauliflower, onions, garlic, and chillies until browned and tender.

  2. Combine the roasted vegetables with vegetable stock and soy cream in a blender or pot.

  3. Blend until smooth to form the soup base.

  4. Season with a pinch of salt and black pepper to taste.
