Halloumi and Butternut Squash Orzo Bake

Ingredients

  • 1 Butternut Squash
  • 1 large Courgette
  • 1 large Red Onion
  • 1 block of Halloumi
  • Juice of 1/2 Lemon
  • 200g Orzo pasta
  • 500ml Vegetable Broth
  • Fresh Basil, for garnish

Preparation

  1. Preheat your oven to 210°C.

  2. Dice the vegetables and drizzle with olive oil. Spread in an ovenproof dish and roast for 25-30 minutes.

  3. Take the dish out of the oven, stir in the orzo and vegetable stock, then place the halloumi on top.

  4. Reduce the oven temperature to 200°C and bake for around 15 minutes.

  5. Flip over the halloumi and continue cooking for an additional 10-15 minutes until golden.

  6. Once cooked, remove from the oven, squeeze lemon juice over the dish, and sprinkle with chopped basil.

  1. This recipe makes 3 generous servings or 4 lighter ones.
