Halloumi and Butternut Squash Orzo Bake
Ingredients
- 1 Butternut Squash
- 1 large Courgette
- 1 large Red Onion
- 1 block of Halloumi
- Juice of 1/2 Lemon
- 200g Orzo pasta
- 500ml Vegetable Broth
- Fresh Basil, for garnish
Preparation
Preheat your oven to 210°C.
Dice the vegetables and drizzle with olive oil. Spread in an ovenproof dish and roast for 25-30 minutes.
Take the dish out of the oven, stir in the orzo and vegetable stock, then place the halloumi on top.
Reduce the oven temperature to 200°C and bake for around 15 minutes.
Flip over the halloumi and continue cooking for an additional 10-15 minutes until golden.
Once cooked, remove from the oven, squeeze lemon juice over the dish, and sprinkle with chopped basil.
